Saddletail Snapper

Saddletail Snapper can weigh up to 6kg and measure up to 70cm long. It is available all year round and is caught a number of different ways. It has a low oil content with a medium flavour and firm texture. It pairs well with Chenin Blanc, Colombard and Semillon, Sauvignon Blanc blends.
