Blue Spot Emperor has a medium texture and flavour with a low oil contact. It has a sweet flavour which is perfect for steaming, grilling, pan frying, poaching and baking. It pairs wonderfully with a rich full-bodied white wine aged in oak such as a Chardonnay.
